1. Receiving & Inspection:
High-quality chickpeas, herbs, onions, and spices are sourced from approved suppliers and inspected for freshness and compliance with specifications.
2. Soaking & Preparation:
Chickpeas are soaked, cleaned, and prepared for grinding.
3. Grinding & Mixing:
Chickpeas are mixed with fresh herbs, onions, garlic, and spices to achieve a consistent and authentic falafel blend.
4. Forming:
The mixture is shaped into balls, mini balls, or patties using calibrated forming equipment.
5. Pre-Frying (Optional):
Some production lines include a light pre-fry step for improved texture and color, depending on client requirements.
6. IQF Freezing:
Falafel pieces are individually quick-frozen at −35°C to −40°C to maintain shape, texture, and prevent sticking.
7. Metal Detection & Packing:
Frozen falafel undergoes metal detection, then is weighed, packed in food-grade bags, and sealed in export cartons.
8. Cold Storage:
Stored at −18°C until loading into pre-cooled reefer containers.
• Keep frozen at −18°C.
• Do not refreeze once thawed.
