Receiving & Inspection: Fresh Molokhia leaves are delivered from contracted farms and inspected for color, cleanliness, and maturity.
Washing & Leaf Preparation: Multi-stage washing removes soil, sand, and field residues.
Chopping: Leaves are finely chopped using calibrated cutting machines to achieve a uniform texture.
Blanching: A brief blanching step to stabilize color and microbiological quality.
Cooling & Water Draining: Excess moisture is removed before freezing.
IQF Freezing: Rapid individual freezing at −35°C to −40°C maintains leaf structure and color.
Metal Detection & Packing: Product passes through metal detection, is weighed, packed in food-grade bags, and sealed in export cartons.
Cold Storage: Stored at −18°C until loading into pre-cooled reefer containers.
